Alfalfa Bill Power Cookies

(with real alfalfa)


2 cups brown sugar

1 cup sugar

¾ cup corn oil margarine

1-cup vegetable shortening or 1/3 cup olive oil

4 eggs or 1-cup egg whites

2 teaspoons vanilla

3-½ cups all-purpose flour

2 teaspoons salt

2 teaspoons baking soda

3 cups uncooked oats

2 cups coconut

2 cups raisins

1 cup chocolate chips

1 cup chopped nuts

½ cup alfalfa leaf tea-optional (can be found in most health food stores)

Bake at 350 degrees. 

Cream together the brown sugar, granulated sugar, butter and shortening.  Beat in the eggs and vanilla.  Combine flour, salt and knead into first mixture.  Drop by heaping teaspoonful, 2 inches apart on greased baking sheet. Bake the cookies in a preheated oven about 10-13 minutes or until cookies are lightly browned. [Do not overcook]. Let cookies cool on baking sheet about 1 minute before removing to rack to cool.  Store in airtight container.  Makes seven dozen irresistible cookies.

May also shape dough into rolls, wrap and chill several hours, then slice/bake as needed.
